In the south of Galicia the last vintage 2016 could be described as a high quality but with a low yield compared to previous years.
During spring, the conditions were not optimal for flowering and purging which meant that the number of clusters and grapes formed were smaller than in other years. Summer was also exceptional in that the weather was drier than we are used to. This resulted in smaller grapes than usual with a highly concentrated aromatic charge. At harvest time the weather remained sunny and dry, providing excellent ripening conditions for the grapes. These conditions allowed the harvest to greatly exceed the parameters of alcoholic graduation and acidity as well as maintaining good sanitation, an important consideration.
For the 2016 campaign, we have obtained a high quality raw material that has facilitated the winery processes so we can work with our own natural yeasts to extract the best of the grapes.
