Bodegas Fion and its Bail wine is a clear and courageous bet in one of the most spectacular wine regions in Spain, Ribeira Sacra. This family project was proposed to enhance the wealth of the land of O Saviñao, in Lugo, using ecological and biodynamic production techniques, to obtain a limited production, excellent quality wine.
The vineyards are located in the heart of the Ribeira Sacra, on sloping terraces on the Miño River as it passes through the parish of A Cova. The humidity here is also much lower than in the Rías Baixas and the rivers act as thermoregulators. The steepness of the vineyards ensures good drainage of the slate and granite soils and the terraced sites are also positioned carefully to maximise sunshine hours. All of these factors enable the vines to produce grapes with concentrated flavors, expressive of the local terroir.
The landscape is covered in steep slopes and canyons overlooking the two rivers and dominated by beautiful banked terrace vineyards. Here, gradients can reach up to 85 percent, making vineyard work laborious or heroic (heroica), as it is known locally.
The process of collecting and selecting the grapes is done manually and with great precision to guarantee the quality of the fruit. Both the traditional knowledge about the ripening of the grape and the latest technology available are used in the winemaking process. The result is a high quality wine known for its original flavor.
Baíl, meaning Prosperity in Gaelic, is a red wine, 100% mencía varietal and 100% ecological produced. It reflects dynamism, softness and passion for ecological viticulture. It has an intense cherry red color with violet flashes, the notes of red fruits are wild, revealing the variety and with mineral memories that reflect the origin of the wine.
All the vineyards are cultivated according to the guidelines of organic farming and certifications are under control of CRAEG (Council of Ecological Agricultural Production in Galicia). This certification ensures that products have always been prepared following the rules of organic farming, and have been controlled in the entire process of production, processing, and packaging.
Baíl is conceived as a great quality wine that is conquering many palates and intends to continue to do so.
The 2016 campaign has been determined by rainfall from the autumn until the month of May. During this agricultural year we have received a total of 1025 mm of rain when typically, we receive between 600 and 700mm. Sprouting began between the first and second week of April, two weeks later than last spring due to cool temperatures and precipitation. The flowering began during the month of June. The summer has been very dry, with no precipitation from mid-June to late August, which caused plant stress due to lack of water. The good news is that the quality of the grape is excellent and we expect the same results with our wine!
